I believe that the classes that humans should have access to are the following:
Warrior
Paladin
Mage
Priest
Warlock/Witch
I think we Humans are kind of Jack of all trades, maybe Humans shouldn't be allowed to be Druid, but the only reason I can think is for races balance.
There's a lack of lore to explain why humans can't be Druids or any other class, I mean they were friends of Bearan for so long, even their will for life and our sentimental nature can explain why humans can be Necromancers.
1st edit: After reading some comments I realized I forgot about the humans-undead lore, so humans shouldn't be able, only the villains like Joul Candio and Leyen said but that's kind of contradictory because you stated in race description that humans can use magic from different sources so ...

Las clases que veo que al humano le quedarían bien por el lore visto hasta ahora serian:
1-Guerrero: obviamente, cualquiera que tenga una buena complexión puede aprender a portar una armadura pesada y manejar el combate cuerpo a cuerpo. Además, humano guerrero, la combinación más clásica de todos los juegos de fantasía, libros o novelas, es evidente que no puede faltar.
2- Sacerdote: Por lo poco mencionado parece que los humanos son capaces de dominar la magia de la Luz Sagrada de la vida al ser creaciones de los dioses del orden, no pueden faltar como sanadores a distancia o guías espirituales.
3- Paladines: Si hay una clase que se enfoca en sanar con la fuerza de la Luz, también debe haber una clase que la use de forma ofensiva y para proteger de forma más directa al inocente. Además, no puede faltar un humano paladín tampoco en juegos de fantasía.
4- Magos: No sé hasta que punto los humanos son buenos magos en este juego, pero si una cosa es cierta es que el viejo del sombrero picudo y larga barba canosa no puede faltar.
5- Piratas: O marineros, sería como un guerrero pero enfocado en un combate más ligero, no puede faltar para el humano, es como el guerrero pero de alta mar.
Las clases que no tengo claro que le peguen a los humanos serian:
1- Ranger: Depende de como sea la clase al final, si es simplemente un arquero creo que perfectamente un humano que ha aprendido a disparar, colocar trampas e incluso domesticar mascotas y sobrevivir. Si en ranger usa habilidades mágicas de la naturaleza no lo tengo tan claro que le pegue al humano.
2- Asesino: Es posible que puedan ser asesinos sigiloso también, aunque les peque más ser honorables guerreros y hechiceros que carguen de frente siempre hay humanos que son menos honorables y piensan que vale más un asesinato silencioso que una guerra. Asesino, ¿Por qué no?
Clases que opino que no deberían ser los humanos:
1- Brujo/bruja: Ya me había hecho a la idea de que los brujos iban a formar parte de la facción contraria, sinceramente viendo que los humanos optan por caminos nobles, no creo que valga la pena ponerlos, sería una contradicción en la historia, además de hacer una clase única por facción es un detalle que me encanta.
2- Nigromante: ¡NO! Por favor, no lo hagáis. Si un problema tuvo el WoW fue anteponer la jugabilidad al lore, confundiendo mucho a sus jugadores y terminando por crear cosas raras para buscar sentido a cosas que no tenían, contradiciéndose a si mismos. Los humanos son unos fieles defensores de la Luz de la vida, solo los peores criminales de la sociedad humana jugarían con esos poderes maléficos.

The lore can really delineate why certain races have not been or
cannot be trained to become one or many of the classes. If we are to
follow the current lore written about humans and the Sacred Order, then
humans would be heavily opposed to any necromancy - because their
previous civilisation was completely overrun and destroyed by undead
corruption. As enemy NPCs we could see human necromancer but as a part
of the Sacred Order and children of the Gods of Order the dark arts
would be antithetical to human creation. Necromancy is the manipulation of death and the dead. Human would find it revolting to pervert bodies with fake life.
The classes that definitely fit are Warrior, Priest and Paladin.
The
Ranger is a good fit for a human character that for one reason or
another prefers the outdoors. Rangers could be the human agents who
scout, patrol and gather intelligence beyond the kingdom's borders for
months or years at a time. These people are resourceful and use every
advantage to avoid capture and harm. These Rangers prefer to be away
from the melee and use range weapons and traps to hinder and
incapacitate threats. Beyond the kingdom's borders there is little help
save for some well trained companions perhaps.
The Pirate may fit as the naval counterpart to Rangers. They explore distant lands, find treasure and establish contact for trade with other lands perhaps. They bring a lot of wealth for the human kingdom.
The Mage has been a classic human character for many games. It does make sense for humans to be able to tap into other magics as a favoured creation of the Gods. In the same vein Druids could be a human path if druidism is a distant exotic form of magic and not a separate force.
For the sake of race balance the Witch and Assassin would not be an option, along with Necromancy as I've explained before.

I don't think Rangers necessarily have to use nature magic. That could be the area for Druids. Rangers are typically scouts or simply people who want as little physical contact with with cities and kingdoms. They prefer the company of no one, or a select few animal companions.

Priests and Paladins, in my opinion should be close nit. I have said so before and will keep saying it. Many games fail to give the sence that that are brothers and sisters of the same faith. Humans as a race that seek meaning in all things would be very religious and as I stated before, Paladins are to priests, what the crusaders where to the scholars and preachers.
That said, Human would fit all exept Druid. Druid is something I think should be unique to High Elves, Bearans and the Minotaurs.
Maybe not even elves. You whould think anthropomorphic animals are those closests to nature.
But back to my point. Humans are generally jack of all trades but we have very strong faith. It would seem natural and well designed to showcase this in the game and lore.

I think Lore needs some changes because it's very similar in many races and ways to WoW lore, please make a Human and other races Lore Topic.
I mean Queen Nepherimas=Sylvannas, Undead=Renegades, Withestone taken by Undead=Lordaeron taken by Renegades, come on.
Let's remember that WoW had Warcraft videogames and novels to explain a lot of things.
You are creating something from 0, a new universe, and I think we as community can create something much better than that.
LORE IS ONE OF THE THINGS WHERE YOU CAN MAKE THE DIFFERENCE
It would be nice that in first Scars of Honor game, each race had his own story to follow to explain their lore and how they got enrolled with Sacred Order or Domination, and then joining all stories in big world plot.

Also because you are creating something from 0, you have the RESPONSABILITY of creating a BALANCED UNIVERSE lore, races and classes inside the rules you are creating, because if you throw a villain that can destroy worlds, and if a Ranger is just going to be a simple archer, what damage can do to that guy? Is like Hawkeye with the damn avengers fighting a lot world destroyer shit, the scales and difference of power are insane.
I know it's a videogame, but let's make a balanced universe.
